Homemade Italian Dressing

This is my super easy and super tasty Italian dressing recipe. It's great on a lettuce salad, used for pasta salads, marinade for meat/poultry and any recipe that calls for Italian dressing. Low salt, healthy ingredients and very inexpensive!


Italian Dressing
1 1/3 cup olive oil
1/2 cup apple cider vinegar
1 tbsp. sugar
1 tsp. garlic powder (could increase this per your taste preference)
1 tsp. Italian seasoning 


Measure the olive oil first then add the rest. Blend with a blender or wisk. Store in refrigerator.

Strawberry Poppy Seed Salad with Feta Cheese

A new family favorite~
Spring Salad Mix (Organic from Costco)
Feta Cheese
Strawberries
Chopped Almonds (optional)

Dressing~
Mix together in a small bowl~ (or use stick blender)
1/3 cup sugar
1/4 cup apple cider vinegar
1/2 Tbsp. poppy seeds
1/4 tsp. paprika
1/2 cup olive oil
1/4 tsp. worcestershire sauce
1/8 tsp. salt

We make individual salad servings but this could also be made in a big bowl.
Prepare salad greens, cut up strawberries, sprinkle with dressing to taste and sprinkle with Feta cheese and Almonds. It's just as good with or without the almonds.

Chocolate Almond Granola

A cook really can't "mess up" granola and anything can be added but here is our current favorite~


In a food processor or blender, grind up/pulse to the texture you prefer~
1/2 cup Almonds (organic)
1/2 cup chocolate chips (semi-sweet, dark, milk~ any chocolate will work!)
Set aside.


In small saucepan melt together ingredients below:
1 cup brown sugar
4 Tbsp peanut butter
4 Tbsp honey
1 tsp vanilla extract
1/2 tsp cinnamon
1/2 tsp salt
Set aside.


In a large bowl combine~
4 cups oats (rolled organic)
4 Tbsp. water


Pour the brown sugar, peanut butter mixture into the bowl. Stir well until combined.
Then stir in ground up almonds and chocolate.


Spoon onto prepared cookie sheets. I use parchment paper and lay the granola on that.
Bake at 350 degrees for 15 minutes.
Allow to cool.
Separate "chunks" and store in air tight container.


It's tasty by itself, in a bowl with milk and especially great with plain yogurt. Enjoy!
