Pumpkin Chocolate Chip Cookies


Pumpkin Chocolate Chip Cookies~ if the pumpkin muffins are da'bomb for muffins these are da'bomb for cookies! This recipe uses simple ingredients, makes a huge batch and everyone loves them. I always get asked for the recipe so time to post it! I made these for our homeschool writing club and they simply disappeared!

Pumpkin Chocolate Chip Cookies
4 cups flour
2 cups oats
2 tsp. baking soda
2 tsp. cinnamon
1 tsp. salt

1 & 1/2 cups butter {yes that IS 3 sticks}
2 cups brown sugar
1 cup white sugar
1 egg
1 tsp vanilla


1 (16 oz) can pumpkin
2 cups chocolate chips


Preheat oven to 350 degrees.


In a medium bowl combine flour, oats, baking soda, cinnamon and salt. Set aside.


In a LARGE bowl cream butter, gradually add sugars, beating until light and fluffy. Add egg and vanilla. Mix well.  Alternate adding in dry ingredients and pumpkin mixing well after each addition.


Stir in chocolate chips.


Drop by teaspoonfuls onto greased cookie sheet. Bake 10-12 minutes. 


This makes A LOT! {at least 6 dozen}
